– chicken breasts marinated in our honey mustard jalapeno sauce and then grilled

Black Bean Chicken – grilled chicken breasts with black bean sauce

Pecan Chicken – grilled chicken breasts with pecan-pineapple salsa

Burrito/Tostada Bar – see Buffet A

Enchiladas – blue corn tortillas baked with chicken or beef, cheeses and rojo sauce

Ensheiladas – blue corn tortillas baked with spinach, cheeses, red and green bell peppers, cream cheese, in our chili verde sauce

Ribs – babyback ribs cooked in a spicy chipotle bbq sauce

Jose Pollo – chicken tenders sautéed in chipotle sauce, with red onions, red and green bell peppers

Jose Beef – New York steak sliced and sautéed in chipotle sauce, with red onions, red and green bell peppers

Relleno – a roasted pasilla chili and cheeses in our spicy egg batter

Mama’s Spicy Veggies – vegetables sautéed in chipotle sauce

Tamales – cornmeal and chicken steamed inside a cornhusk, with rojo, black bean machaka and chili verde sauces

Side Dishes: Caesar Salad, Rice, Black Bean Salad, Pasta Salad, House Salad, Chipotle Mashed Potatoes, Black Beans, Corn on the Cob (when available)
